Please note, if requesting a single room and there is availability, advance payment is required to guarantee the request. 

The balance of the cost of your tour is due not less than 180 days prior to scheduled departure or 30 days after paying a deposit, if booking within 180 days of scheduled departure. Full payment is due before confirming booking if scheduled departure is within 90 days. If we do not receive this balance in full and on time, we reserve the right to treat your booking as cancelled by you.

Chef & Traditional Cook | Tlalixtac de Cabrera, Oaxaca — Spanish · English

Enrique trained outside Oaxaca before making a deliberate choice to return home — a decision that now defines his cooking. He's the founder of Colectivo Yuu Guet, a project celebrating the gastronomic and communal richness of Tlalixtac, and today leads Lucina Cocina de Humo, where he designs tasting menus and hands-on workshops rooted entirely in local ingredients and traditional techniques, including nixtamalization over ash and firewood.

For our guests, Enrique doesn't just cook — he narrates. Every dish comes with its context: where the ingredients came from, the agricultural cycles behind them, and the family histories that shaped them. Guides who can do that — with clarity, warmth, and real expertise — are rare, and it's exactly what makes his experience unforgettable.
